Champagne & Caviar Dinner Celebration highlights the anniversaries of two Chicago culinary institutions.

Carolyn Collins and her daughter Rachel Collins, fisherwomen-turned-caviar connoisseurs, will kick off their 25th year of producing American freshwater caviar with an elegant Champagne & Caviar dinner on Friday, December 9th at The Signature Room at the 95th. The four-course gourmet dinner beginning at 6 p.m. will feature a variety of caviar styles, each paired with specially selected champagnes, a classic complement to the premium roe, and a menu created by The Signature Room?s executive chef Patrick Sheerin.

Collins Caviar opened in 1983 in Chicago?s northwest suburbs when the mother and daughter duo turned a hobby into a profession. Today, their company is a premier American Caviar producer. The company became an icon in the Artisinal food producer's community when it opened its first facility in Chicago. Their innovative caviar creations include the now famous flavor-infused and smoked caviars, which they have become so well known for. Collins Caviar relocated to a larger facility in Michigan City, Ind. in 2005 to meet the ever-growing demands of their customers across the nation.

Chicagourmets, a food and wine society, was founded in 1997. It hosts over 70 events annually for its 700 members. ChicaGourmets and Collins Caviar have co-hosted many events throughout the years, and are delighted to be celebrating their anniversaries together at the Signature Room.

Please join us on Sunday, August 12th for the first ever bus tour from Chicago to fabulous Michigan City Indiana- the "Global Headquarters" of the Collins Caviar Company.

Come and visit for the day to see our Artisinal processing facility and methods of making America's finest Caviar. In 2005 we moved to an historic former brewery building in the Elston Grove neighborhood- less that a mile from the shores of Lake Michigan. The 1892 landmark building has been refurbished to house our FDA production facility. It is also a spacious and lovely site unlike any other to host a party! We can guarantee you've never been to a more charmingproduction facility!

We will be offering you a scrumptious 7 course Caviar Buffet, (please see attached invitation for menu details) Our friends at the world-famous Chicago based House of Glunz are providing Sparkling wines and a LOCAL Michigan Winery the friendly vintners of Wyncroft Winery will also be pouring their lovely offerings.
